You could make a <Computed Text> on the line below the date field. Let the formula be the field name of the date field (you may use @Text for any special date formatting). Now simply hide the Date field in read mode and the Computed text in Edit mode. This way the date is displayed black on white (or whatever the text/bg colors are on the form.
